Rhubarb Crunch
2/3 C. brown sugar
1-1/2 C. oatmeal
1/2 C. flour
1/2 C. butter, melted
1/2 C. white sugar
3 C. Griffieon rhubarb
1-1/2 Tbsp. flour
Preheat oven to 350 degrees. Mix the first 4 ingredients and press into a deep 9x9 pan or pie plate. Reserve some of the "crust" to use as crumb topping. Mix the sugar, rhubarb and flour. Spread into crust. Sprinkle the reserved crumbs over the top. Bake at 350 for 45 minutes. Best served with ice cream or whipped cream!

Homesteader's Beef Stew
2 pounds of Griffieon Family Farm Stew Meat (cut into 1-inch cubes)
1-2 Tbsp. Vegetable Oil
1-1/2 cups chopped onion
1 (14 1/2 oz) dices tomatoes, undrained
1 can condensed beef broth, undiluted
3 Tbsp. quick cooking Tapioca
1 minced garlic clove
1 Tbsp. dried parsley flakes
1 tsp. salt
1/4 tsp. pepper
1 bay leaf
6 medium carrots cut into 2 inch pieces
3 medium potatoes, peeled and cut into 2 inch pieces
1 cup sliced celery (1 inch pieces)
In a Dutch oven, brown the beef, in oil. Drain. Return meat to pan. Add remaining ingredients. Cover and bake for 2-1/2 hours at 350 degrees. Serves 6-8 and pairs great with homemade bread!

3 Tbsp. butter
2 Tbsp. all purpose flour
1 1/2 tsp. salt
1/8 tsp. pepper
3 C. milk
6 medium sliced potatoes
2 Tbsp. chopped onion

Make white sauce from first five ingredients. Grease a 2 quart cassarole dish. Cube ham slice. Layer half of potatoes, half of ham, half of onion, half of white sauce. Repeat Layers. Cover and bake at 350 degrees F for about 1 hour. Remove cover and bake 30 minutes longer. Serves 4-6 people.
